Abstract

The bakery industry is undergoing paradigm shifts due to increased customer demand for healthy foods, sustainable manufacturing techniques and innovations. At the same time, growing concerns about food waste, environmental harm and the depletion of natural resources are driving increasing interest in the use of underutilized bioresources in food systems. Fruit and vegetable processing waste, cereal waste, leguminous bioresources, wasted coffee grounds, etc., might be promising bioresources with a considerable potential in boosting the nutritional and functional quality of bakery products and being in line with the principles of circular economy. The present narrative review aims to provide an overview of the available literature on incorporating underutilized bioresources into bread products, with respect to nutritional enhancement, sustainability, consumer acceptance and competitive advantages. In this study, emerging breakthroughs in fiber enrichment, protein augmentation, antioxidant optimization, alternative flour use and waste valorization will be discussed. It also explores the effects of Industry 4.0 technology on sustainable bakery innovation, including artificial intelligence, blockchain systems, automation, robots and smart packaging technologies. A review of published research reveals that underutilized bioresources can enrich baked items with dietary fiber, protein, antioxidants, and other micronutrients, and can also help minimize food waste. However, optimal utilization of underutilized bioresources faces many problems, such as sensory qualities, legislative compliance, production scale-up, and consumer perception. The role of sustainability communication, sustainability branding and digital technology in consumers’ decision-making is increasing. This analysis gives a multi-disciplinary viewpoint on sustainable bakery innovation and identifies potential research avenues on precision formulation, digitalisation, life cycle assessment and consumer product design.
